Recount the Past Week
Posting each week will help me keep track on what I am doing and where I am at in my project. This post will be documenting the progress of week two even though it is my third post. Here are some questions that need answers:
1) What did you accomplish this week?
This week I researched good foods that are vegetarian-friendly. Clean Slate is a cookbook/guide that has helped me figure some things out regarding the whole meatless situation. There are a couple pages in the book that talk about how and what to replace a few items with more healthier choices. Here are a few examples:
white potato--to--sweet potato
It's not like white potatoes are "bad" for you, it's just that sweet potatoes happen to be richer in fiber, vitamin A, and potassium.
iceberg lettuce--to--romaine lettuce
Iceberg lettuce often appears in your salads but it is literally 95% water and contains little fibers or minerals. Romaine lettuce, on the other hand, offers more fiber and is packed with a large variety of minerals such as calcium and magnesium. It is also naturally low in sodium and contains vitamin A and K.
milk chocolate--to--dark chocolate
Dark chocolate gets its bitter flavor from heart-protecting antioxidants and flavonoids (which has antioxidant and inflammatory health benefits). All of which milk chocolate has a short supply of.
2) What are you working on right now?
As of today, I have been researching some recipes that will be used during the thirty days. These recipes will include foods that are definitely healthy, high in nutrients, and low in calories and carbs. I have also researched some foods that I can replace meat with (this is important because we get the majority of our proteins from meat). Some of these foods include dark green leafy vegetables (ex: broccoli) and eggs. These conclusions will most likely be on the next post along with other findings from throughout the week.
3) What do you plan to do next week?
Next week, I would like to research on the pros and cons of being a vegetarian. I think that this is going to be very important to the meaning of my project. I will document these results on the next post along with my thoughts on going vegetarian as of now. Finding the pros and cons of this diet will definitely affect my thoughts and I would like to see if it is in a good way or a bad way.

The photo on the right is of me during some day of the past week and the one on the left is of poke, one of the foods I will be missing most during my time as a vegetarian.
